Is there a method for finding, in a decently readable way (i.e., not "show run-config" or "show access-point-config") a list of all access points' primary, secondary, and tertiary controller preferences? A certain report from WCS, a script, a command from SSH, etc would do. Being able to run it across multiple controllers would be nice too.

Yes, there is.
If you are using WCS there is the Report Launch Pad where you can do this by some editing.
Choose Device --> Inventory --> New
If yoy now choose Report type --> AP and then click on customize you will find more option.
In the Custom Report Name field you change to AP Inventory.
Then choose what data fields you want to use:
Primary Controller
Secondary Controller
Tertiarary Controller
etc, and add to the data fields to include in the report.
You can sort on controllers if needed.
