Hi,
The switches located at the wiring closet are Catalyst 3550. They have no fiber port. I plan to use a third party UTP to fiber converter at the switch end to increase the distance of the AP since Cisco has an inline power fiber converter which can be installed at the AP side. Can I propose this solution?

Yes, for sure you can.
This is pretty straightforward. Media converter works in Layer 1 OSI model and you can even buy one with Power injector on the Access Point side. Otherwise, you will need to deploy power supply to the Access Point.
From the Switch and Access Point view, they are directly connected.
Just pay attention at your Fiber type and the Media Converter type, it matters !
