what are the best tools for monitoring, vulnerability test,  testing WLAN over Voip, etc. for wireless networks either hardware or software?

The easiest test is to take a wireless handset and call a landline.  From the landline, put the call on hold.  From your wireless handset you will hear music on hold (MOH).  Then start walking around.  The music should never drop.  If the music drops, you've got coverage or roaming issue.

I have a conservable size wireless network with a few thousand  Cisco 7925 and Vocera Badges. Here is what I use.

AirMagnet for survey

AirMagnet Analyzer for quick analysis 

Wildpackets OmniPeek Professional / Enterprise for capture 

Wildpackets OmniPeek WiFi Appliance (NEW) 

and then your typical debugs on the phones and the controller with the use of prime..

This rounds out my tool bag for voice.
