I Have to verify that the WAP (9120) supports at least 8 SSIDs with different security profiles simultaneously. Is there any document where I can find this information?

You should try and ideally keep the number of SSIDs on a channel down to 2-3 SSIDs and look at using AAA override or iPSK to seperate the different users into different segments.

There is a good reference on adding SSIDs can have effect on WIFI performance located here.

As Leo said the max that you can apply to an AP technically is 16 but I would not recommend this
