Right now I have this turned off. We use the Palo Alto firewall to do what it seems like most of what this feature does. Maybe Im not completely well versed on what it is or how to use it. Are there any instances where others have this enabled?

AVC comes with two features, Visibility & Control.
if you want to get visibility of wireless traffic you have to enable it on your WLANs.
If you want to control your wireless traffic (mark up, mark down, block,etc), you have to use that feature. Keep in mind that may be a performance impact depend on size of your wireless network when you enable this controlling feature.
I have enabled it on my WLANs just to get visibilty, not to control traffic. Here is how I used it

Hi,
Qos is one reason you might need to enable AVC. In environments with mobile users and softphones, It is much easier to use AVC to identify and mark your traffic.

The Visibility component is pretty helpful, to management, because it provides them with "pretty pictures" about what kind of traffic is traversing on each SSID.
The Control component is really helpful because it allows us to block unwanted traffic, like bittorrent. However, recently we've had to disable the Control because we are hitting CSCvf88246.
