What may prevent wireless users attending video conference from excessive segment/packet loss? As of now when 4-5 attendees participating in a video conference, complain of bad reception. What is to prevent collisions of segments during video transmission?

It's no different to the requirement for RTP: Co-Channel Interferrence, duty cycle, protocol, distance from the nearest AP, etc.
This happens if, for example, the video conferencing client is associated to 2.4 Ghz in a noisy environment.

SNR > 25
no interference
no channel utilization ,
WMM is enabled
encryption is AES
low data rates disabled .
QoS profile of that WLAN is gold or platinum
