I'm more familiar with UCCE, but is there a way in UCCX to see how many agents are logged into a queue in real time?

Yes, either in supervisor desktop application or with real time reports in UCCX admin web pages (Tools -> Real Time Reports), then look at the "Resource Cisco Unified Contact Center Express Stats" report under the Report pull down menu.
