BE6 ESXi upgrade to 6.7 from 5.5

Question: does the Virtual Machine hardware should be updated after upgrade from 5.5 to 6.7?

No it says:  Compatibility ESXi 5.0 virtual machine and seems like all is working fine but not sure if it should be upgraded to 6.X

It depends on the CUCM version you are running. E.g. CUCM 12.5 needs VMV 13.

Also, the OVA filename gives you a hint on that e.g. "cucm_12.5_vmv13_v1.0.ova"
