I have to implement 5 SRST sites. When I read the SCCP SIP SRST Admin guide implies that if you are using a IOS gateway for SRST and not CME the for SRST to work you use the "CAll-Manager-Fallback command. If you are running CME then you use the telephony service to enable SRST. Which one is correct. Can someone clarify this for me please.
Either way seems to work but which should I use?

There's no correct, or incorrect here, they're different options, SRST provides basic features, CME-as-SRST allow you to pre-configure the phones and DNs to provide more options. Usually SRST allows more phones than CME-as-SRST.
The CME admin guide has a chapter about enabling SRST that discusses this topic.
You need to determine which one you need to use, based on your requirements.
