Need help setting up intercom feature on 7841 ip phones. Also, need Admin password. It is not Cisco, cisco, 1234, admin, or password

about admin password of phone >>
check Common Phone Profile on CUCM, and change password from this profile.. if profile is assigned on phone..
also you can create a Common Phone Profile without password, then assign to phone + do reset factory key combination procedure on phone..

You haven't specified which call control system you're using to register the phone. The intercom configuration process differs between CME and CUCM.
Regarding the password Perform a factory reset to clear all settings.
