Hi All
I was recently shown a hosted voice service called 8X8, I believe you can register Cisco Voice phones such as the 7841 etc to it.
How would this work? I am guessing they would be preconfigured with some sort of SIP gateway address?

You get yourself a 3PCC device and then the hosted PBX should provide you with the connection info you configure on the device, unless they re-sell you directly the device with the config preloaded.

I assume you are talking about the Hosted Collaboration Solutions (HCS) service offererd by 8X8.xom.

I am not sure about their service offerings. if they provide Cisco HCS and the recommended CUCM (Cisco PBX) , well you don't have any issue deploying 7800 series on your premises.
Hosted PBX is basically all your PBX will be hosted remotely with your provider and you will have just phones (or some times SIP CUBE) on your premises. Rather than being responsible for hardware, software, training, maintenance, and more, a hosted PBX provider takes care of it all.
