I have cisco SPA122, Cisco cp-8851 IP phone and a Samsung all-in-one printer scanner fax, and I'm trying to set it up to work with windows fax and scan. Any advice on setting this up for faxing? Thank you in advance

For what do you need the phone for? It has nothing to do with Fax...
Where do you register your SPA to? 3rd Party PBX?
For the other things:
- Register the SPA to your PBX with the desired directory number
- Connect the printer with the SPA analoge port
- Configure the fax settings in the printer (Check the printer documentation, that's not Cisco related)
- Configure your windows settings (Check the microsoft documentation, that's not Cisco related)

You haven’t answered @b.winter ’s question. The SPA is merely an Analog Terminal Adapter to provide analog telephone service. It must register to a call control platform to function at all - and whether faxing is supported will depend on that solution, not just the SPA hardware.
The 8851 has nothing to do with this; it’s a desk phone for voice calls only. Same for the Windows scan-to-fax; that may be a feature of the Samsung device but certainly not the SPA.

If you don't know how to answer "Where do you register your SPA to? 3rd Party PBX?" I fear you're going to need more assistance than we can offer on the forums. The SPA122 is useless by itself just as a cable/DSL modem is useless without a local internet provider; they are merely terminals that connect to and are controlled by a larger solution. The SPA needs a phone system to function, either on-premises or hosted by someone else. For example, Webex Calling multi-tenant supports the 8851 for voice calls and the ATA191 (the SPA122 is end of life) for analog phones and fax machines. You could use Webex Calling as a business phone system, Cisco Calling Plan in supported countries or a Cloud Connect partner for connectivity to the telephone network, and an ATA191 to connect the fax machine.
All of that seems to be overkill if you're just trying to fax from your computer. There are plenty of SaaS fax solutions that you could find through your favorite search engine. For larger use cases (i.e. not a single user) two vendors that are commonly used in the Cisco ecosystem are Imagicle and OpenText XM Fax Cloud. They are by no means the only options though.
