Hello,

Do we have any documents for what support the customer can get on CUCM virtualization (installing CUCM on third party server)?

You only get support for the CUCM application and nothing else.
Cisco won't take over the support for the virtualiziation technology or the hardware server, if the are not from Cisco. But that is not hard to guess ...
