We are exploring canceling our PRIs and going to a SIP trunk. What is the best way to determine concurrent call usage to appropriately determine the size of the SIP trunk that we need?

Contact your PRI provider and have them provide it. Otherwise you can enable RTMT counter log for active calls on the GW and leave it for few days and then look for the highest usage.
