I have an End User that has a phone set up to receive another End User's voicemail. How do disable and create a new voicemail greeting in the CUCM?

CUCM handles the calls, not the voice mail, you need to figure out what system you use for voice mail in order to get any help, explain (or post screenshots) of how it's currently configured and what is the exact outcome you want.

I am not familiar with these Cisco phones so I'm not sure how to go about finding out what system the voicemail uses.

Start by looking at the voice mail related configuration in your CUCM, the DN which you use and where the call routing points to (Either VM SCCP VM ports or a SIP trunk)
