Hello,
I am looking to find the following information in unity 8.x:
1.) How much space is left on disk for Unity mailboxes
2.) How much space is consumed by all users' mailboxes on the server.
I will use this information to properly size Mailbox Quotas.

You can go at CUC Admin web page-> Tools -> Tasks Management -> Monitor Disk Space
"Monitors Unity System directories and sends alerts if disk volume is getting full."

It is good to create a different mailstore rather than going on increasing existing one. Since One single mailstore with very high size can cause issue with the messages which are handled while being recorded, queued, routed to different mailboxes and accessed. Also with any messaging system issues might be there with DRF backups when single mailbox store of very large size.

Just wanted to add a note to the excellent tips from Leonardo
and Geevarghese (+5 each my friends!)
If you want to drill down to the user level, try this Tool from the great suite
of Unity/Unity Connection Tools you can include the mailbox size in the report you generate;
Connection User Data Dump (CUDD) Tool
The Connection User Data Dump (CUDD) is a Windows-based remote database administration tool available on the Cisco Unity Tools website. CUDD allows you to export specific information about users to a file that can be viewed or imported into another application, such as a database utility or Microsoft Excel. When the data is exported, the tool automatically creates a header row that lists the data type found in each column of the output, for ease of import into other programs.
The tool is available from the "Superb" Unity Tools site;
