Hi Oscar,
There is not a nice chart that shows the differences, but they can be seen
in the version release notes

You already have the compatibility matrix so that pretty much answers your question of which version you can go.
Take some time to review which version you want to go and determine if it's a 1 jump or a 2 jump process.
As for restricted and unrestricted.
Restricted is the regular CUCM version that has all the security features enabled.
Unrestricted doesn't have the ability to authenticate and/or encrypt signaling nor media.

so for my case I can upgrade from 7.0 to
Export Restricted Cisco Unified Communications Manager Release 7.1(5x)
Im afraid this export Restricted, i dont know if is working fine. We will not need encrypt any media or call.
but we wants the latest that probably have not bugs.
what do you thing? from 7.0 at wich you will upgrade?
thanks a lot...

Hi Oscar,
You will want to go for the Restricted version due to the upgrade
limitations placed on "Unrestricted" versions. Many people here
still find this version as the most stable of all the 7.x builds;
