Hello
Is it possible to use a DRS-backup v.7 and restore it on a new server v.8.51 ??
or are there another way to "move" from 7 to a new server 8.51 ?
Regards

No, a backup and posterior restore need to be on the EXACT SAME VERSION (all the way to ES/SRs)
Other than upgrading the server and then taking the backup once on 8.5(1) the other option is BAT.

Hi,
Please upgrade on the MCS from ver 7.x to ver 8.5.1, take a backup & then fresh install the exact 8.5.1 ver in VM & restore

While it likely will work, it's not supported for CUCM 7.x to be on VMware. Should you have a problem you may be out of luck. The supported way to upgrade is to check your serve model based on this matrix (http://www.cisco.com/en/US/partner/prod/collateral/voicesw/ps6790/ps5748/ps378/prod_brochure0900aecd8062a4f9.html), many servers are supported for a bridged upgrade. This means you are allowed to install an unsupported CUCM version on your server, so that you can take a backup of it while it's on your target version, which then can be restored on your final platform (UCS/VMware). You will notice that during a bridged upgrade, when the server reboots, your only option will be to take a backup. The web page will only have the DRF page, and only services required to take a backup will start. Here's additional information about the bridged upgrade process: http://www.cisco.com/en/US/docs/voice_ip_comm/cucm/cucos/8_0_2/cucos/iptpch7.html#wp1058411
