I have an ASA 5510-K8 that is running ASA Version 9.1(5) & ASDM 7.3(1)101 that I need to upgrade.
What options do I have to upgrade this guy?
And how do I upgrade?

You are not too far off the latest version at 9.1.5, the newest is 9.1.7 you will have to download the ASA software from Cisco.
This is for the ASA and ASDM:

https://software.cisco.com/download/home/279916854/type/280775064/release/7.9.2.152
Once you have the files you need you can use either the ASDM or CLI to upgrade, ASDM is much easier but here is a guide for both:
You may also want to note that the end of support for that device in September of this year so after that there will be no more software released for it.

And if I wanted to upgrade to a new device. What would be a good replacement for the asa 5510?
Is there someone I could reach out to to figure out what's a good option and pricing?

looking at the upgrade path.
Am I safe to assume that I can upgrade from my current version to the latest version asa917-29-k8.bin in one go? Without having to upgrade to something in between?

No, because your courrent version is not too old compared to the recomended one, so you can go directly to 9.1.7 without problem.
