Is there are way I can change the Corporate Directory to use the 'IP Phone' value under a user account in AD?

You have to first integrate the Active directory with Callmaanger. Then you can use the IP Phone value of user account in AD for Corporate directory.

Thanks, Have intergrated ok but what do I do to change the pointer from Telephone to IP Phone details under the user account?

I don't think this is possible, because the AD plugin that you install queries a particular set of records in AD and displays that in the Global Directory. I don't think it can be modified.
