Hello, is there any documentation about the possibility of connecting a switch to the PC port of a Cisco IP Phone?

You can certainly do this, but it's definetley not recommmanded. And keep in mind that the PC port on the phone is not a trunk so everything connected to the switch will have to be in access vlan that's defined as access vlan on the switch that the phone connects to.

You can achieve this by disabling spanning-tree on the switchport connected to the phone. Alternatively you can disable bpdu guard. Needless to say, proper care should be taken before doing any of the above.
