While configuring the Wireless LAN Profile PSK, is there a way to hide or disable the "show passphrase" button from other users? Does this require a different role to be created?

Unfortunately, the roles in Cisco UCM does not allow that level of control of a page. Even setting a user's role on the page to 'read only', the user can hit the 'show password' and have the password displayed. So at this time, the only way to prevent someone from being able to see the PSK passphrase is to remove both read and write access from the user.
Your request would also be a good candidate for a feature request. If you have a TAC case open on this, ask them to file a Sev 6 defect to have a read only role not be able to activate any checkboxes on the displayed page.
