one of our partner notify us that they are going to decomission one of their server.
I want to know, what should i do on our side?
Would be just remove the no. 2 server?

That will depend on what elements are involved in your call routing, but that is something you should know.
At least from the CUCM side, yes, all you need to do is to remove the other server from the SIP trunk.

Then either you try to find out a senior engineer who knows how this is configured, or you try to figure out the whole configuration by going to each device that is used in the SIP trunk to find out who that is, and if it needs to be adjusted as well.
