We have a customer on a relatively small network using Catalyst 3750. The question is, is there any latency introduced by doing intervlan routing ?
i.e if I previously accessed a server on the same vlan , and now moved it to a different vlan and used the 3750 to route, would there be any degradation in speed due to routing ?

Yes, since it has to do a layer 3 processing of the packet.
Where as this should be negligble, since you are reducing the size of the broadcost network, which will improve overall network performance.
But if your switch supports fastswitching/CEF/netwflow, should not make any performance difference as if it is single L2 segment.

3750 does CEF based forwarding and will not see any performance hits.
