Using meraki MX68 just as gateway for routing and monitoring (no VPN)

I am deploying an Starlink internet service in a remote location. In the first stage, we want to test it and monitor it to be able to measure its health and stability.
In such scenario the purpose of the Mearki would be just as a regular gateway routing and NATing incoming LAN traffic toward the internet, while leveraging the uplink, latency and loss monitoring in-built on the appliance.
No VPN connection/tunnel would be established.

I am a rookie working with Meraki, but I understand that beyond "under-using" the Meraki such scenario is perfectly possible.

Any advice or comments from the glorious community are appreciated.

Meraki most of the time rely on cloud dashboard. (that is management)

Thanks Balaji.
After reading the guide. I also understand that in the afore mentioned scenario, the appliance will be able to connect to the dashboard just fine (previously having configured the serial and so on at the dashboard), and then monitor the link latency, loss and up-link utilization from the cloud dashboard rather than from the appliance. correct?
