Hi,
Will BGP neighbor default-originate work in an BGP network if a peer at a central site tries to send it out to only one peer? I'd like to test this for just one site but there are multiple remote sites connecting to the central site and I do not want to affect those exepct on a case by case basis.

Yes, only the neighbor specified in the neighbor X.X.X.X default-originate command will receive the default route. You can check the BGP RIB afterwards - it won't contain the default route per se so it won't be distributed to all BGP peers.
