Is it possible to do dynamic VLAN assignment on Cisco 3560 switches so that when a user logs in, it will prompt for a login, and according to their credentials, their device will be part of a network?
If yes, where would I begin? I have the freeradius.net installed on a test laptop that I'll be using as the RADIUS server. I'll be using Windows 7 & 10

It is possible and you need to spend some time to explore the solution. Good to start from here,

Nice article. My question is, since I'm using Windows 10 I don't have a MD5-Challenge. Can I choose one of the other options? I'm going to make a Cisco switch dynamic vlan.

It's completely doable. I've done this at my last job on a 3650 switch using RADIUS server on Windows Server 2012 R2. If you are already using Active Directory in your environment it's super easy to use Windows server for RADIUS authentication.
