Hi,
I've labed l2TPv2 over a WAN connection and it seems to work fine. So far I have only configured one VLAN to traverse the L2TPv3 tunnel. There are a couple of VLANs that I would like to send across the WAN. Could I configure several L2TPv3 tunnels(VLANS) off 1 interface - like a trunk? That way, I wouldn't need a new interface on the Headend router for every VLAN I wanted to get to another site.

Yes, you can have multiple VLANs to one l2tpv3 tunnel.

cisco press book 'layer 2 vpn architectures' is a very good book, and has many configuration examples.
You can read the example from google book
Seach for 'ethernet port-to-port emulation' - multiple VLANs to one l2tpv3 tunnel
and 'Ethernet VLAN-to-VLAN emulation' - one VLAN to one l2tpv3 tunnel
