can and what is that command so that subnet 10.5.0.0 255.255.0.0 when trying to go to subnet 12.1.0.0 255.255.0.0 goes to this IP 10.100.2.80. Is this somthing that can be in a catalyst 3750e

Not really sure of your problem, but routing normally happens with destination IP addressess. Each IP packet has a source and destination IP.. there is no way that the packets go to 10.100.2.80, unless there are any source based routing rules (route-maps) which can divert the packets to some other IP...
under normal circumstance:
if the source is 10.5.x.x destination is 12.1.x.x, the packets will reach 12.1.x.x
if route-maps are configured, the packets can reach some other destination given on the route-map (10.100.2.80)..

this can be done with the help of route maps and the catalyst 3750 metro switch supports this feature.
