I know that if the vPC keepalive link fails, vPC is unaffected as long as the vPC peer-link is still up. Effectively, the keepalive passes over the peer-link for the duration of the failure.
I have a slightly more complicated requirement: I need to change the management addresses of the two vPC peers. Will the vPC itself will fail during the change? I am guessing that in the situation where the keepalive link fails, the keepalive traffic passes over the peer-link but still uses the management addresses. If I want to change those addresses, am I going to have to book a maintenance slot?

Yes you need a maintenance window for changing the peer-keepalive IP Address.
