Hi, Jonn...

1. There is a good Power Calculator Tutorial/Q&A sections (link is located on the home page of Power Calculator Tool), they explain how the calculator derives the final power results

3. Unambiguous answer, what PS you need is not... All depends on the continued growth...
4. Based on your current configuration, the minimum PS in redundant mode is 1000W, but you have one empty slot for further growth and if you need in future the PoE 1000W PS not suitable (1000W and 1400W AC data-only PS). Perhaps a choice of power supplies whis support PoE will be more preferable - 1300W, 2800W or 4200W.
5. Also keep in mind that 2800W PS  has 1400W for data and 1400W for PoE, 1300W and 4200W PS do not allocate a fixed amount of power for data and PoE

please see highlighted item in green in the attached document...

It is important that it is not only the Minimum Power Supply,but still Single/Redundant... not Combined
