it looks as though most documentation out there refers to channeling from the VSS system to other cisco switches.
is there a recommended configuration when channeling from a server to each of the chassis in the VSS?

Robert,
Most server operating systems support LACP, as PAGP is Cisco propriety protocol.. Also, LACP works really well when connecting servers to VSS pair. This will provide you NIC redundancy and also switch residency

Reza, our servers are currently connected to non-VSS Cat6500 switches with mode ON.
Is there a best practice configuration when connected to the VSS?
The servers have four NICs and two will be connected to each VSS.

I have tested your scenario with VSS and 2 NICs from each server, and found out that LACP works really well.
