Hi,
I need catalyst 48 ports poe with 2 ports fiber. I want to go on 3850 series but I don't know the good part number to have 2 ports fiber

Aside from 2 fibre ports, do you need:
1. PoE or uPoE;
2. mGig; and/or
3. 24 or 48 port

Depends on your requirement.
1. If you don't need to stack two (or more) than stacking cable ain't mandatory; however
2. If you need, in the future, to stack two (or more), order the stacking cables then.
Same goes with power stacking cables.
Last question for SFP PN is the GLC-SX-MMD or GLC-LH-SMD right ?
The optional module "C3850-NM-4-1G" will only support 1 Gbps SFP (and not 10 Gbps SFP+). If you need to "future proof" your investment it is good to get the C3850-NM-2-10G (two SFP or SFP+ ports) or C3850-NM-4-10G (four SFP or SFP+ ports).
The ports can support a variety of SFPs based on different wavelength. The complete list can be found HERE (scroll all the way down to the "3850" section).

this depends on what fibre you have between the switches, MMD for multi mode SMD for single mode
