If I want to pass a default route via EIGRP, so all routers will get a default, do I want to...
network 0.0.0.0 0.0.0.0
or
network 0.0.0.0 255.255.255.255
Or is there a better way?

assuming you have a default route defined already using the "ip route..." command, try "redistribute static".

Try using the "ip default network" - If you want all router to use this router as the default out.

I would say better way but different ways depending on the network or customer requirements.
