We are looking for recommendations for replacing our existing N7K.
Is someone able to guide us in the right direction...

Hi,
The 9400 should be a good replacement for the 7K, since you only need Ethernet modules. See datasheet:

Recently replaced Nexus 7K with Nexus 9K spine and Leaf (that is best option you have)
which support vPC, if you going nexus9K model (VDC support) - you do not need, you can segment the network different.

I actually need VDC and that is why I was asking about it
For historical reasons I need to segment in a certain way and VRFs are not enough
