What type of risk/impact is there when enabling jumbo frame on Nexus 7K.

It can cause disruption to the network if your server/storage device is set to 1500 and the switch at jumbo (MTU mismatch). If you are doing this in a production network, I would have an outage, do it and test it.

I have heard that once you implement jumbo packets that there maybe a recycle needed, is that the case. Basically we need to enable jumbo on 7K, we have a couple of 2K's that will be connecting UCS. It's within a VDC. However I understand that it must be enabled globally.

On the 7ks, there is no need to reboot after enabling jumbo frame. Also, you don't have to enable it globally, you can do it per interface.
