I need a fixed configuration data center switch (Catalyst is fine) that offers more than 24 ports of 1G SFP, not RJ-45. Need SFP fiber interfaces...

You have the 4900M if you use network modules and twingig adapters.

You can also go with a nexus 5548

and the 4500X

I would go with the a 5548 or a 5596, the 4900M is...pricy.

Like dominic says: Nexus 5548/5596  with Nexus 2000 on Top of the rack design; but it is preferable that you study carefully what are you need before make a decision.

In my opinion, Nexus family is the future because are designed for DataCenter, it is a new concept of DataCenter: "Converged DataCenter".
