Does nyone know if you can use the Monitor or Rspan command on a 3750g switch to monitor a switch port several hops away ?

you can use that 3750 as the destination of RSPAN, however the first hope switch of the traffic you want to monitor needs to be able support rspan as well. As that will be configured to be the rspan source

If you mean with hops, RSPAN traffic from a source port through several upstream switches to the final destination port (and thus crossing several switches), the answer is: YES.

If you mean several routing hops away: (crossing multiple upsteam routers in different) the answer must be NO as to my knowledge the router will not forward all the traffic.
