Hello everyone,
Is there a Cisco document where the equivalence relationship between old switches and the new models that replace them appears?
For example, the 9200 as substitutes for the 2980, etc...

That depends on the business use of the 2960 switches.
2960 is purely a simple layer 2 switch. If the business use is purely that, a Layer 2 switch only, and the business use does not require automation or SD Access or DNAC, then 9200/9300 is a massive overkill.
The best layer 2 replacement for the entire 2960G/S/X/XR is the Catalyst 1000.
NOTE: I would not recommend Catalyst 1200 and 1300 because these are SMB switches "promoted" to Catalyst portfolio and their behaviour is not at par with "classic" IOS.
