If you have a pair of 3k or 9k series Nexus that are joined in a vPC domain, can you have a vPC port-channel for a host (server, PC, etc.) that has 1 or more ports in switch A and 1 or more ports in Switch B all part of the same port-channel or are they basically different port-channels (e.g. ports 1-4 on switch A in Po1; ports 1-4 on switch B in Po1 thus making all of these ports on both switches part of the same port channel)?

Yes, you put all 8 ports from both switches in the same Portchannel.
