Is there an extension for the 8" touch UI available for the EX90, or can one be made?
As far as I can tell the answer is No to both, because the connector is proprietary, but an official answer would be nice here since I have a customer asking the same question.

a) C series intouch can be connected directly to the EX90 (based on my own test) with no issues face so far. But R&D did not test this and so they do not recommend this and is not officially supported.
b) For the power adpator method, you can connect the way as shown on the link I gave earlier "connecting the touch screen via LAN", it will work. You can do a manual pairing and point the intouch to the EX90 IP address. I have tested and it works.
c) The only thing I have not tested is to connect the power adaptor network link directly to the EX90 PC LAN port. If I have time I will try it.

I am pretty sure the answer is no too. However you could purchase the C series version of the Touch 8" which has like a 7m cable on it and use that with the EX90.

maybe just the ethernet / power injector box could also work,
but then the cable inbetween that one and the cisco tp touch would be quite short.

The ethernet/power injector box suggest by Martin will work for EX90 also, but do note that when you use that, the handset cannot be use.
I have personally used the Intouch (with 6.5m) cable with the EX90 directly and did not face any issue.(though I am not too sure if this is officially supported and tested)

Is this 6.5m cable an orderable part? I can't find it if it is. Part number?
I don't have familiarity with the c-series version of the InTouch panel, only the version that comes with the EX family.
Can we find out if it's officially supported? 6.5m would be long enough for this application.

You can actually goto this link to have a look at the connection method of the intouch for the c-series codec.
The lenght is actually 7.5m reflected in the guide
You cannot just order the 7.5m cable alone. It is sort of attached togather with the touch panel.
But again, note that this touch panel has no handset.
I confirmed that use of this touch panel directly connected to the EX90 is not recommended actually and not officially supported as there could be a possibility of insufficient power supplied to the panel.

The touch panel not having a handset isn't going to be an issue; a separate microphone is already in use.
So, if I'm understanding correctly, you're saying that I cannot connect the c-series touch panel directly, but that I can connect it using the power injector and an ethernet cable, correct?
Can I directly connect the touch panel to the PC port on the EX90? Is a crossover cable required? How do I put an EX90 in 'pairing mode'?
The customer has a dedicated video VLAN and connecting the touch panel to a wall jack would require provisioning a dedicated wall jack--less desirable than a direct connection.

The C series touch 8 can be connected directly to the EX90 with no problems. Both touch devices are exactly the same with (2) exceptions. The EX series touch 8 comes with a 120cm cable coming out of the touch device and also comes with the handset & cradle. The C series touch 8 comes with a 7.5m cable coming out of the touch device but does not come with the handset & cradle.
The C series touch device works in all EX codecs. The EX series touch device works in all C codecs. The only caveat is that the handset will not work when using the PoE adapter.
The PoE adapter cannot be used when connected the touch 8 to an EX codec as the codec does not have an Ethernet port capable of pairing & the power from the EX & the PoE would most likely blow out the touch device.
Finally you cannot pair the teouch 8 with an EX, it can only connect direct.
