We are running CUEAC 10.x
wondering if there is a way that when a call is transferred from attendant to end user that it could show where the call is coming from (i.e. the attendant) as now it shows CTI port information as the "From".

Yes, you can, but there's a trade-off for making this happen, the reason the calls are extended via the CTI ports, is so they remain in control of the AC at all times, and the transfer recall can happen.
You can change this directly in the client: Options > Preferences > Advanced > Select No Calls
Doing so, means the call will be seen as if it was made directly by the phone, BUT, transfer recall will no longer work as the CTI port will no longer be in the middle handling the call for AC.

So in turning this option off it will display the name presented by the attendant position as configured on the phone?

I tested it and it only shows Original Callers number to the end user the call is getting transferred to.
Any other thoughts or suggestions?
We have many attendant positions and would like users to know where call is coming from.
