We are in the process of shutting down one of our data centers and turning up a new one. Our plan is to build a new subscriber in our new datacenter then shut down the one no longer needed when we shut down the old one. We are able to do this with Call Manager.
Is this possible?
The "Add New" button is grayed out when I look at the list of servers in my cluster.

No that is not possible. A CUC cluster does only contain two nodes, a publisher and a subscriber.
