Hi all,
Can someone confirm me if I can implement CUCM (and not UCM Express) in ESXi6.0 installed in IBM Server X series or Flex Series and not in an UCS Cisco Product ?

Your server first should be part of the below list.

Also check below link for compatibility

And yes you can install CUCM on ESXi 6.0, below link talks about ESXi compatibility

Do notice that there are servers that might be supported according to ESXi guidelines, but not by Cisco, all the requirements that have to be met to be fully supported, are here

Review the supported HW link, and special attention at the CPU requirements.
