A few more points that i can add to the above post:
>> check if the UCCX scripts are working fine by dialing into them from internal as well as external phones
>> Check if the Presence / chat functions are working between clients which have them enabled including any additional features like file or desktop sharing
>> if any third party apps are integrated with the Cisco UC apps then check if they are still working as before
