i want to know what's the default number of ip phones supported on MCS7845I3-K9-CME1 and MCS7845I3-K9-CMD3B, and what's the default version installed on each one

All MCS7845s support up to 7500 phones.  There is not default version as CUCM does not come pre-installed you need to order specific version separately.
