I've read many posts here that Unity does indeed mark all RTP traffic with DSCP EF (46) but I cannot find, here or in Cisco's documentation, if SCCP traffic is marked and if it is which value does Unity use? Is it AF31 or CS3?

According to Unity Design Doc:
http://www.cisco.com/univercd/cc/td/doc/product/voice/c_unity/design/udg/network.pdf
page 25 it is still AF31.

Chris,
Thanks. I appreciate it. Odd that they've switched CallManager to CS3 for SCCP but kept Unity on AF31. Something to watch out for later on.

Its always good to remark packets on the switch regardless, so you can be always on the safer side.

P.S. You will be able to change the DSCP values with Unity 5.0
