When a person has left a voice message left in the user's inbox, the inbox states: "Unity Messaging System". In the subject line it will tell us where it is from (example message from phone number). Is there a way to change the "inbox" to that state that it's from "number" or "name" in the inbox?

The sender isn't customizable because the sender actually is the Unity Messaging System mailbox from the perspective of Exchange/Domino. The subject line is hard coded in Unity.
For internal callers Unity submits the message through their mailbox if they are on the same server or by spoofing the sender for callers on other system within the same dialing domain. This is called Identified Subscriber Messaging or ISM.
For outside callers Unity will put the calling party number in the subject line it isn't available.

I have a similar scenario.
Internal callers on a separate unity server in the SAME dialing domain show as the following:
From: [User's Name]
Subject: Message from [internal number]
Internal callers on the same unity server in the SAME dialing domain show as the following:
From: [User's Name]
Subject: Message from [User's name]
Why might this be? Given that both Unity Servers are part of the same AD forest, shouldn't I have the same information on both?
