We think to make a callmanager upgrade to version 9.1 but we have a dude respect to download the new firmeware to al the phones or used the COP file from version 8.5 for all telephones on version 9.1. ¿this can be possible?

Phones will automatically upgrade their firmware after the upgrade to whatever the default firmware is defined for the CUCM.
COP upgrade file needs to be installed when going from CUCM 8.5 or older to 8.6 or newer as that prepares the Linux Red Hat Enterprise for OS upgrade.

The principal trouble is that we would like to control the migration firmeware on telephones cause us MPLS is not enough to support al the petitions from 1200 telephones to Callmanager on center node is for this situation that we would like to know if i upgrade only the callmanager from 8.5 to 9.1 is possible that the telephones can operated with the firmeware 8.5 and our callmanager to 9.1.

Use Firmware Load Sharing feature of CUCM to enhance the firmware upgrade.
If you do not want to upgrade firmware you can change the default firmware load to existing firmware which will not trigger firmware upgrade.
Phones can operate with older firmware loads.
