How do I associate a service profile to a pool of servers? When I associate he profile, only one server gets it. Can only 1 server be associated to one profile at a time?

that's correct - each server needs a separate profile.

i dont understand why. It gives you the option to apply to a server pool. A serer pool is usually a bunch of servers. but when i apply it to that pool. only one server is associated with it. Isnt that more work to create a single profile for each server?

Every service profile its a 1:1 mapping to hardware. By associating the profile to the pool you're associating to one server within that pool.

Server Pools, they are kinda mysterious area of UCS deployment
You can use them for speed up deployment, or to create pools for application farms with specific hardware requirements.
you can use different polices to tweak the way how UCS will place your available blades in different pools, etc, etc..
